⅓ cup raw cashews, soaked*
1 cup water
2 tbsp tapioca flour or cornflour
2 tbsp lemon juice
1 tbsp SpicenEasy Olive Oil
1 tsp SpicenEasy Garlic Powder
1 tsp SpicenEasy Smoked Paprika
½ tsp salt
¼ tsp turmeric (for colour, optional)
*Quick-soak cashews: *Cover with boiling water and soak for 15-20 minutes, then drain.*
Instructions:
Blend: Combine all ingredients in a high-speed blender. Blend until completely smooth and creamy.
Cook: Pour the mixture into a saucepan. Heat over medium heat, whisking constantly.
Thicken: Continue to cook and whisk for 3-5 minutes until the sauce thickens dramatically and becomes stretchy and glossy.
Season: Taste and adjust seasoning if needed. For a thinner sauce, add a splash more water.
Serve Immediately: Toss with cooked pasta for vegan mac and cheese, pour over nachos, or use as a dipping sauce.
