2 cups SpicenEasy Wheat Bran Flakes
1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice)
⅓ cup vegetable oil or melted coconut oil
1 large egg
⅓ cup brown sugar or honey
1 tsp vanilla extract
1 cup wholemeal flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
½ cup raisins or chopped dates (optional)
1 tsp cinnamon (optional)
Instructions:
Soak Bran: Preheat oven to 200°C (180°C fan-forced). Line a 12-cup muffin tin with cases. In a large bowl, combine wheat bran flakes and buttermilk. Let stand for 10 minutes to soften.
Combine Wet Ingredients: To the bran mixture, add oil, egg, brown sugar, and vanilla. Mix well.
Add Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon (if using). Add to the bran mixture and stir until just combined. Fold in raisins or dates if using.
Bake: Spoon batter into muffin cases, filling each about ¾ full. Bake for 18-20 minutes or until a skewer inserted into the centre comes out clean.
Cool: Let cool in the tin for 5 minutes before transferring to a wire rack.
