Ingredients:
For Cooking the Dal:
1 cup SpicenEasy Toor Dal
3 cups water
½ tsp turmeric powder
½ tsp salt
For the Tadka (Tempering):
2 tbsp SpicenEasy Ghee or oil
1 tsp SpicenEasy Cumin Seeds
1 tsp SpicenEasy Black Mustard Seeds
1 medium onion, finely chopped
2 cloves garlic, minced
1-2 dried red chillies or 1 fresh green chilli, sliced
½ tsp SpicenEasy Garam Masala
Handful of fresh coriander, chopped
1 tbsp lemon juice
Instructions:
Cook the Dal: Rinse the Toor Dal until the water runs clear. In a pot, combine the rinsed dal, 3 cups of water, and turmeric. Bring to a boil, then reduce heat, cover, and simmer for 30-40 minutes until the dal is soft and creamy. Skim off any foam. Once cooked, stir in the salt and mash the dal lightly.
Prepare the Tadka (Tempering): In a small pan, heat the ghee over medium heat. Add the cumin and mustard seeds. Once the mustard seeds begin to pop, add the dried red chillies, then the onion and garlic. Sauté until the onion is soft and golden.
Combine and Finish: Pour the entire contents of the tadka pan into the cooked dal. Be careful, as it may sizzle! Stir well.
Final Seasoning: Stir in the garam masala, fresh coriander, and lemon juice.
Serve Hot: Serve your delicious, homemade Toor Dal immediately with steamed basmati rice or warm roti.
Chef's Tip: For an extra layer of flavour, you can add a pinch of asafoetida (hing) to the hot ghee just before adding the other tempering spices.
