Ingredients:
1 cup SpicenEasy Soup Mix
1 tbsp olive oil
1 large onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
8 cups vegetable or chicken stock
1 can (400g) diced tomatoes
2 bay leaves
1 tsp SpicenEasy Dried Thyme
Salt and black pepper to taste
2 cups chopped seasonal vegetables (e.g., potatoes, pumpkin, zucchini)
Fresh parsley for garnish
Instructions:
Rinse Soup Mix: Rinse the soup mix under cold water and drain.
Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery and cook for 5-7 minutes until softened. Add garlic and cook for another minute.
Combine Ingredients: Add the rinsed soup mix, stock, diced tomatoes, bay leaves, thyme, and seasonal vegetables to the pot.
Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 45-60 minutes, until the soup mix is tender.
Season: Remove bay leaves. Season with salt and pepper to taste.
Serve: Ladle into bowls and garnish with fresh parsley. Serve with crusty bread.
