ngredients: 1 cup SpicenEasy Millet Flour ½ cup tapioca flour or arrowroot flour 1 tsp baking powder ½ tsp salt ¾ cup warm water 2 tbsp olive oil or ghee, plus extra for cooking
Optional: 1 tsp SpicenEasy Cumin Seeds or chopped fresh herbs
Instructions: Mix Dry Ingredients: In a medium bowl, whisk together the millet flour, tapioca flour, baking powder, and salt.
Form Dough: Make a well in the center and add the warm water and olive oil. Mix until a soft, slightly sticky dough forms. If using, add cumin seeds or herbs now. Rest Dough: Cover the bowl and let the dough rest for 10 minutes. This allows the flours to hydrate fully.
Shape Flatbreads: Divide the dough into 6-8 equal pieces. Roll each piece into a ball, then press or roll out between two sheets of baking paper to form thin circles (about 15cm diameter).
Cook: Heat a non-stick frying pan over medium-high heat. Brush lightly with oil. Cook each flatbread for 1-2 minutes per side, until golden brown spots appear and the bread puffs slightly. Serve: Keep warm wrapped in a clean tea towel. Serve immediately with curries, dips, or as a wrap.
