Ingredients:
2 cups SpicenEasy Yellow Split Peas, rinsed
1 tbsp olive oil or SpicenEasy Ghee
1 large onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
8 cups vegetable or chicken stock
1 bay leaf
1 tsp SpicenEasy Dried Thyme
½ tsp SpicenEasy Ground Turmeric (enhances colour)
Salt and black pepper to taste
Optional: 1 potato, diced, for extra creaminess
Instructions:
Sauté Vegetables: In a large soup pot, heat the oil or ghee over medium heat. Add the onion, carrots, and celery and cook for 5-7 minutes until softened. Add the garlic and cook for another minute until fragrant.
Combine Ingredients: Add the rinsed split peas, stock, bay leaf, thyme, and turmeric to the pot. Stir to combine.
Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, stirring occasionally, until the split peas are very soft and have started to break down.
Finish the Soup: Remove the bay leaf. For a completely smooth soup, use an immersion blender to puree until creamy. For a chunkier texture, simply mash with a potato masher.
Season: Season generously with salt and pepper. If the soup is too thick, thin it with a little more stock or water.
Serve: Ladle into bowls and serve with a drizzle of olive oil and crusty bread.
Chef's Tip: *No soaking is required, but for the creamiest results, you can soak the peas for 1-2 hours before cooking. The soup will thicken as it cools. If it becomes too thick upon standing, simply thin it out with a little extra stock or water when reheating. This soup freezes exceptionally well for up to 3 months!*
