1 cup SpicenEasy Rice Flour
1 tbsp coconut sugar or brown sugar
2 tsp baking powder
¼ tsp salt
1 large egg
¾ cup milk (dairy or plant-based)
2 tbsp melted butter or coconut oil, plus extra for cooking
1 tsp vanilla extract
Instructions:
Mix Dry Ingredients: In a medium bowl, whisk together the rice flour, sugar, baking powder, and salt.
Combine Wet Ingredients: In another bowl, whisk the egg, milk, melted butter, and vanilla until smooth.
Make Batter: Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are okay – do not overmix.
Cook: Heat a non-stick pan or griddle over medium heat. Add a little butter or oil. Pour about ¼ cup of batter per pancake onto the hot pan.
Flip: Cook until bubbles form on the surface and the edges look set (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
Serve: Serve immediately with maple syrup, fresh fruit, or your favourite toppings.
Chef's Tip: *Let the batter rest for 5 minutes after mixing – this allows the rice flour to hydrate and results in a more tender pancake. For extra-fluffy pancakes, separate the egg. Add the yolk with the wet ingredients, and whip the white to soft peaks, then fold it in at the end. These pancakes are best eaten fresh but can be frozen and reheated in a toaster.*
