Ingredients:
2 cups SpicenEasy Green Split Peas, rinsed
1 ham hock or 200g diced cooked ham
1 large onion, diced
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
8 cups chicken or vegetable stock
2 bay leaves
1 tsp SpicenEasy Dried Thyme
Salt and black pepper to taste
1 tbsp olive oil
Instructions:
Sauté Vegetables: In a large soup pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and cook for 5-7 minutes until softened. Add the garlic and cook for another minute until fragrant.
Combine Ingredients: Add the rinsed split peas, ham hock (if using), stock, bay leaves, and thyme to the pot. Bring to a boil.
Simmer: Reduce heat to low, cover, and simmer for 1 to 1.5 hours, stirring occasionally, until the split peas are very soft and have broken down to thicken the soup. If using diced ham, add it in the last 20 minutes of cooking.
Finish the Soup: Remove the ham hock and bay leaves. If you used a ham hock, let it cool slightly, then shred the meat and return it to the pot.
Season: Season generously with salt and pepper. For a smoother soup, you can blend half of it with an immersion blender.
Serve: Ladle into bowls and serve with crusty bread for a complete, comforting meal.
Chef's Tip: No ham hock? Use a tablespoon of smoked paprika for that classic smoky flavour. The soup will thicken considerably as it cools. If it becomes too thick upon standing, simply thin it out with a little extra stock or water when reheating. This soup tastes even better the next day!
